 A whole foods vegan diet is  jammed with lots of nutrients like minerals, vitamins, phytochemicals etc. but because of heating a number bit of these essential nutrients can be destroyed.  Because of this, there a plethora of  benefits to eating raw food. 

 When foods are heated above 118 degrees, their enzymes, proteins, and other vital nutrients are destroyed!  . In addition to this, the absorbable and organic state of minerals in raw form gets converted into state in which they are not easily digested by the body. During the process of cooking, Vitamins C and B which are Water-soluble vitamins get leaked out of food.  As a result, raw foods are more nutrient-dense (and thus healthier) than their cooked counterparts.  .

Researches have shown that during the cooking process over 80% of the nutrition in food gets destroyed. In addition to this, raw foods comprise high levels of enzymes.  These vital enzymes help us digest food better and lessen the digestive burden on our body. 

By ways of raw foods diet, we can minimize the need of our body to develop its own digestive enzymes. This can save some energy which can be utilized b our body for other vital functions like cell revivify, rejuvenation, healing, etc. On the contrary, some of the enzymes get destroyed because of heat. Thus, the intake of a largely cooked diet may slow down digestive processes in our body. Owing to this, unnecessary amounts of toxic by-products may get developed in our body. consequently, it is beneficial to eat food in its raw and natural form. Eat raw food to keep fit and healthy .
