I am searching for a red beans and rice recipe that has ground beef in it. I have seen recipes with sausage and ham hocks, et cetera, but am looking for a recipe with ground beef. Thanks.

COWBOY CASSEROLE
1 lb. ground beef
1 clove garlic
1/2 c. chopped onion
1/2 c. chopped green pepper
1 tsp. salt
1 tsp. chili powder
1 can (16 oz.) red beans, drained
2 1/2 c. tomatoes, chopped with juice
3/4 c. uncooked rice
3/4 c. grated cheddar cheese
1/4 c. sliced black olives (opt.)
Brown beef with garlic. Add onion and green pepper, cook until onion is transparent. Drain fat. In 2 quart casserole, combine meat mixture, salt, chili powder, beans, tomatoes and rice. Bake, covered at 350 degrees for 30 minutes. Uncover and sprinkle with cheese and olives and bake for 15 minutes more.

SHIPWRECK CASSEROLE
2 onions, sliced
2-3 potatoes, sliced
1 lb. ground beef
1/3 c. raw rice
2 stalks celery, chopped
1 can red kidney beans
1 can tomato soup
1 beef bouillon cube dissolved in 1 cup water
1/2 tsp. Worcestershire sauce
Arrange onions on bottom of greased 1 1/2 quart casserole. Place potatoes on top and sprinkle with salt and pepper to taste. Spread crumbled ground beef over potatoes. Add uncooked rice, celery and kidney beans.
Mix together tomato soup, bouillon and water and Worcestershire sauce. Pour over casserole. Bake, covered, at 350 degrees for 1 1/2 hours or until potatoes and rice are cooked.

Red beans are combined with lean ground beef and vegetables, and served with hot cooked rice.
Ingredients:
* 2 tablespoons vegetable oil
* 1/2 pound extra lean ground beef or ground turkey
* 1 cup chopped onions
* 1 cup chopped bell peppers
* 2 cloves garlic, minced
* 1 tablespoon lemon juice
* 1 tablespoon mustard, prepared
* 1 teaspoon chili powder
* 2 tablespoons soy sauce
* dash cayenne pepper
* 1 cup tomato sauce
* 2 cups cooked or canned Red beans, rinsed and drained
* 3 cups hot cooked rice
Preparation:
Heat oil in large skillet over medium heat. Add beef, onions, green pepper, and garlic; sauté until tender, stirring several times.
In a small bowl combine lemon juice, mustard, chili powder, soy sauce, and cayenne with a small amount of tomato sauce and whisk until thoroughly blended. Stir in remaining tomato sauce, then add to meat mixture. Add beans and cook for 20 minutes, or until flavors are well blended.
Serve with hot cooked rice.

TEXAS RICE
1 lb ground beef
3 cups cooked white or wild rice
1 jar bbq sauce
2 cans red beans
1 large red onion, diced
1 Tsp Worcestershire sauce
1 tsp minced garlic (or to taste)
1 large jalapeno pepper, sliced (or to taste)
In large cast iron skillet, brown ground beef, diced onions, and garlic. In the meantime, cook rice. Add the sliced jalapenos to the skillet and cook over medium heat, until beef is done and vegetables are tender.
Reduce heat to low; add the cooked rice and remaining ingredients and simmer, stirring often, for about 30 minutes or until consistency thickens. Serve.
If desired, top with sour cream before serving for a bit of an added flavor.

Plan to start this flavorful dish the night before, or follow the bean package directions for a “quick soak.” Serve these red beans over hot boiled rice with cornbread or cornbread muffins.
Red Beans and Rice With Sausage and Ham
Prep Time: 20 minutes
Cook Time: 2 hours, 45 minutes
Ingredients:
1 pound small red beans
6 slices bacon, diced
1 1/2 cups chopped onion
1/2 cup chopped celery
1 large red or green bell pepper, chopped
4 cloves garlic, minced
12 ounces andouille sausage, thinly sliced or diced
8 ounces diced ham
2 teaspoons Creole seasoning blend
2 bay leaves
Preparation:
Rinse and sort the beans, discarding badly formed beans and debris. Put the beans in a large bowl or pot, cover with water to about 2 inches above the beans, and let soak overnight. Or, follow the package directions for a “quick soak.” Drain and set aside.
In a large kettle or Dutch oven, cook the bacon over medium heat until just crisp. Add the onion, celery, bell pepper, sausage, and ham. Cook, stirring, until onion is browned, about 5 minutes. Add garlic and cook for 1 minute longer. Add the Creole seasoning, bay leaves and continue cooking, stirring, for about 2 minutes longer. Add the chicken broth and water and bring to a simmer. Add the the beans to the pot and simmer, uncovered, over medium low heat. Cook, stirring occasionally, for about 2 to 2 1/2 hours, or until beans are very tender. Add more broth or some water if the beans seem dry. Mash some of the beans against the side of the pan and continue cooking for about 10 minutes. Remove bay leaves and serve over hot cooked rice.
Serves 8 to 10.
