Carolina Barbecue Recipe?

On an a recent trip to Raliegh, NC I fell in love with Carolina barbeque. Now, I’m looking for a good recipe for the barbeque so that I can make it at now that I’m back home. Also if anyone has a coleslaw recipe that compliments the barbeque I would like to get that too.

Carolina Honey’s BBQ Sauce:

1 cup Ketchup
1 cup white vinegar
1/2 cup molasses
1/2 cup honey
1 tsp liquid hickory smoke
1/2 teaspoon salt
1/4 tsp garlic powder
1/4 tep onion powder
1/4 tsp Tabasco hot sauce

Simmer to blend flavors for 30 minutes

The Weber Big Book of Grilling has a series of exact recipes covering authentic eastern Carolina style barbeque and slaw (the vinegar based variety you likely had in Raleigh) and western Carolina barbeque (the tomato based variety which is also excellent). You can find it online at amazon.com or at your local bookstore.

We’ve made it several times, smoking the pork on the grill as well as doing it in the oven, all with excellent results. The book also has a summer’s worth of other excellent recipes that have become family favorites. Well worth the investment.

Having lived in NC for 13 years now, we certainly agree that Carolina barbecue is addictive.

A Carolina BBQ Rub
INGREDIENTS:

* 2 tablespoons salt
* 2 tablespoons sugar
* 2 tablespoons brown sugar
* 2 tablespoons ground cumin
* 2 tablespoons chili powder
* 2 tablespoons freshly ground black pepper
* 1 tablespoon cayenne pepper
* 1/4 cup paprika

PREPARATION:
Combine all ingredients in a small bowl and mix well; use as a dry rub on beef, chicken, lamb or pork.

Lexington Coleslaw
INGREDIENTS:

* 2 1/2 to 3 pounds white cabbage
* 1 cup cider vinegar
* 2/3 cup ketchup
* 1/2 cup water
* 3 tablespoons sugar
* 1 teaspoon salt
* 1/4 teaspoon cayenne pepper (optional)
* 1/4 teaspoon black pepper
* 1/4 teaspoon chile powder
* dash of hot pepper sauce like Tobasco

PREPARATION:
Chopped cabbage. In a small saucepan disolve the sugar in the cider vinegar over a medium heat. Add other ingredients except the cabbage and mix well while simmering for about 10 minutes. Remove from heat before the mixture gets thick.Allow to cool for about 10 more minutes then pour over cabbage. Toss until well mixed. Serve immediately.
